Cooking in Madagascar. A traditional Malagasy dinner.

Heat olive oil in a large pot over medium heat until shimmering.

Add chopped onion and sauté until translucent, about 5 minutes.

Stir in minced garlic and grated ginger, cooking until fragrant, about 1 minute.

Add diced beef and cook until browned on all sides, about 8-10 minutes.

Incorporate chopped tomatoes, stirring to combine, and cook for 3-4 minutes.

Pour in water to cover the meat, then add bay leaves and thyme.

Season with salt and black pepper, then bring to a boil.

Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.

Add chopped mustard greens and spinach, stirring to incorporate.

Cook for an additional 10-15 minutes until greens are wilted.

Adjust seasoning with more salt and pepper if needed.

Stir in lime juice before serving.

Serve hot with rice or bread.
