2 pounds clean shrimp, tails removed
2 lemons, zested and juiced
2 large onions, chopped
4 red bell peppers, chopped
8 cloves of garlic, chopped
2 tablespoons ginger, chopped
2 teaspoons salt
1 teaspoon black pepper
2 cups coconut milk

Season the shrimp with 2 tablespoons of olive oil, 2 teaspoons of salt, 1 teaspoon of black pepper, and the juice from 2 lemons.

Mix the shrimp with clean hands and let it marinate for about 30 minutes.

Heat a pan and add a little more oil to it.

Add the marinated shrimp to the pan in batches, cooking until they are almost done, then remove them from the pan.

Saute the onions and garlic in the same pan, adding more oil if necessary.

Once the onions are translucent, add the bell peppers and reduce the heat to medium-low.

Cook the mixture uncovered for about 15 minutes to thicken the sauce, stirring occasionally.

Prepare the Sakai condiment by blending 7 Thai chili peppers, 1 clove of garlic, 1 inch of ginger, 1/4 cup of olive oil, and 1/2 teaspoon of salt until desired consistency is reached.

Add the cooked shrimp back into the pan with the sauce, including the shrimp juice, and cook until the shrimp are fully cooked but not rubbery.
