2 lbs beef cut into 1" cubes
1/4 C oil
1 large chopped onion
1 can diced tomatoes
1 T grated garlic
1 T grated ginger
1 T + 1 t salt
1 t pepper
1 minced jalapeno
8 C water
1 bunch spinach
1 bunch watercress
1 bunch mustard greens

Fry onions in oil over medium heat in large pot.

When translucent, add beef and let cook 15 minutes, stirring occasionally.

Add garlic, ginger, jalapeno, salt, pepper, and tomato and let cook 15 minutes more.

Add 8 C water and bring to a boil.

Once water boils, add greens and reduce heat to medium low.

Stir and allow to simmer one hour or until meat becomes tender.

Serve hot over rice.
