Start with 350 ml of warm water.

Add 7 g of yeast and 1 tablespoon of brown sugar to the water; whisk together.

Melt 1 tablespoon of butter and add it to the mixture; whisk well.

Add 500 g of all-purpose flour gradually, mixing until it starts to come away from the sides of the bowl.

Knead the dough until smooth and elastic; it should feel springy.

Cover the dough with cling film and let it rise for 1 hour in a warm place.

After rising, divide the dough into pieces weighing about 80 g each.

Roll each piece into a long rope, as thin as possible without breaking.

Shape the rope into a pretzel shape by folding it and tucking in the ends.

Prepare a boiling solution with 100 g of bicarbonate of soda in 2 liters of water.

Boil the pretzels in the solution for 20 seconds each.

Remove the pretzels and place them on a clean tea towel to drain.

Transfer the pretzels to a baking tray and sprinkle with coarse salt from a grinder.

For a cheese sauce, melt 1 tablespoon of butter until brown, then add 3 tablespoons of flour and mix to form a paste.

Add 200 g of cheese (100 g cheddar and 100 g red leicester) to the sauce and mix until melted and smooth.
