Soft Pretzels

Cultural Context

Soft pretzels are a popular snack in the United States, especially at fairs, sporting events, and street vendors. They have roots in German baking traditions, where pretzels were originally made as a symbol of good luck. The American version has evolved to include various toppings and flavors, making it a beloved treat across the country.

1

Warm 1 cup of milk to about 110 degrees Fahrenheit and pour it into a large bowl.

2

Sprinkle 2 tablespoons of white sugar over the milk, then add 2 teaspoons of active dry yeast on top.

3

Let the mixture sit for about 10 minutes until it becomes foamy.

4

Add 1/2 teaspoon of salt and 2 tablespoons of softened butter to the yeast mixture.

5

Add half of the 2 and 1/4 cups of all-purpose flour to the bowl and mix with a wooden spoon until it forms a batter-like consistency.

6

Gradually add the remaining flour and mix until it comes together.

7

Knead the dough a few times in the bowl to incorporate any flour stuck to the sides.

8

Transfer the dough to a floured surface and knead for 1-2 minutes until combined; avoid overworking it.

9

Coat a large bowl with about 1 tablespoon of vegetable oil, place the dough in it, and cover with a moist towel.

10

Let the dough rise for 1 hour until it has doubled in size.

11

Prepare the baking soda solution by mixing 1 cup of nearly boiling water with 1 and 1/2 tablespoons of baking soda in a bowl; whisk until dissolved.

12

Once the dough has risen, cut it into 6 equal portions.

13

Roll one piece of dough into a 30-inch log, forming a horseshoe shape with the ends pointing towards you.

14

Cross the ends over each other and fold them up, pinching to form the pretzel shape.

15

Submerge the pretzel in the baking soda solution for 5-10 seconds, then lift it out and place it on a greased or silicone-lined cookie sheet.

16

Sprinkle pretzel salt on top of the wet pretzel to taste.

17

Preheat the oven to 450 degrees Fahrenheit and bake the pretzels for 9-10 minutes until golden brown.

18

Remove the pretzels from the oven and brush them with 2 tablespoons of melted butter.
