Soft Pretzels

Cultural Context

Soft pretzels are a popular snack in the United States, especially at fairs, sporting events, and street vendors. They have roots in German baking traditions, where pretzels were originally made as a symbol of good luck. The American version has evolved to include various toppings and flavors, making it a beloved treat across the country.

1

Pour 1.5 cups of warm water into the mixer bowl and dump it out into the sink.

2

Add 1 tablespoon of sugar to the warm water.

3

Add 1 package of yeast to the water and mix; let sit for 5 minutes until foamy.

4

Melt 2 tablespoons of butter and set aside.

5

In a separate bowl, measure out 4 cups of flour and mix in 1 teaspoon of salt.

6

Add 1 cup of flour to the yeast mixture to create a slurry.

7

Add the melted butter to the slurry and mix until smooth.

8

Add remaining flour gradually while mixing on medium speed until dough comes together and is not sticking to the bowl.

9

Knead the dough by hand for about 4 minutes until smooth and elastic; perform the window pane test.

10

Oil the dough lightly, cover, and let rise in a warm place for about 40 minutes until doubled in size.

11

Boil 10 cups of water and preheat the oven to 450°F.

12

Measure out 2/3 cup of baking soda and add it to the boiling water.

13

Divide the dough into 8 pieces and roll each into a rope about 22 to 24 inches long.

14

Shape each rope into a pretzel by making a U-shape, twisting, and folding over.

15

Gently lower each pretzel into the boiling baking soda water for 30 seconds, then remove and place on a baking sheet.

16

Optional: brush with egg wash for a glossy finish and sprinkle with coarse salt.

17

Bake in the oven for about 12 minutes or until golden brown.
