Pour 1 tbsp of sugar and 7 g of instant yeast into a bowl.

Pour in 250 ml of warm water and slightly mix.

Cover with a pot, film, or towel and leave for 15 minutes in a warm place.

Sift 500 g of flour into the bowl, add a good pinch of salt and 2 tbsp of vegetable oil.

Start kneading with a spoon and then use your hands until the dough is not sticky and very soft.

Knead the dough in the bowl and then on the table for 1 to 10 minutes until it becomes elastic.

Put the dough back in the bowl, cover with a towel or film, and leave for 15 minutes in a warm place.

Shape the dough into a rectangle or circle and cut into 10-12 pieces for large pretzels or 16 pieces for smaller ones.

Take one piece and cover the rest with film.

Shape the piece into a sausage by rolling it on the table, starting from the center and moving hands to the edges, making the center thicker and the edges thinner.

Shape the sausage into a crescent by turning over the edges and twisting it up, fastening it well.

Put the formed pretzel on baking paper and slightly cover with film.

Leave all pretzels in a warm place for 30 minutes, then put them in the fridge for 1 hour.

Before 5 minutes are up, start making the lye by pouring 1 liter of water into a pan and bringing it to a boil.

Turn down the heat to medium and add 3 tbsp of baking soda spoon by spoon, making sure the water simmers.

Take out the pretzels and dip each one in the soda mixture, showering it with water without turning it over, and slightly pressing with a skimmer.
