Bagels

1 cup warm water
2 teaspoons active dry yeast
2 teaspoons sugar
2½ cups all purpose flour
1 tablespoon brown sugar packed
1 teaspoon salt
2 quarts water for bagel dipping
1 tablespoon baking soda
coarse sea salt for sprinkling
poppy seeds optional
1 egg white mixed with 1 tablespoon of water for egg wash

In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Add the bread flour and salt to the yeast mixture. Mix until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat the oven to 425°F (220°C).

Bring a large pot of water to a boil and add malt syrup if using.

Divide the dough into 8 equal pieces and shape each piece into a ball. Poke a hole in the center and stretch it to form a bagel shape.

Boil the bagels in batches for about 1-2 minutes on each side. Remove and drain on a wire rack.

Place the boiled bagels on a baking sheet lined with parchment paper. Brush with egg wash and sprinkle with sesame or poppy seeds if desired.

Bake in the preheated oven for 20-25 minutes or until golden brown.
