Bagels

600 g strong flour
1 teaspoon yeast
1 teaspoon soft brown sugar
1 teaspoon salt
350 mL warm water
black and white sesame seeds

Measure out 600 g of strong flour.

Add 1 teaspoon of yeast, 1 teaspoon of soft brown sugar, and 1 teaspoon of salt to the flour and mix together.

Add 350 mL of warm water and mix until combined.

Knead the dough on a work surface for about 5 to 6 minutes until smooth and stretchy.

Roll the dough into a ball and place it in an oiled bowl to rise for 1 hour.

Prepare parchment paper by cutting it into medium squares for the bagels.

After 1 hour, punch down the dough and divide it into 9 equal portions.

Roll each portion into a ball and pierce a hole in the middle to shape the bagels.

Place the shaped bagels on the prepared parchment paper and let them rest for 15 minutes.

Prepare a pot of boiling water with a little salt.

Simmer the bagels in the water for 30 to 40 seconds on each side.

Dunk the bagels in a mixture of black and white sesame seeds after boiling.

Place the bagels on a baking tray and bake in a preheated oven at 180°C for 25 minutes.

Allow the bagels to cool for at least 30 minutes before slicing.
