Marinate pork belly with 1 teaspoon black pepper, 1 tablespoon calamansi juice, and 2 tablespoons soy sauce; mix well and let it sit.
Marinate chicken liver with a bit of black pepper, 1 tablespoon soy sauce, and 1 tablespoon calamansi juice; mix well and let it sit for 15 minutes.
Heat 2 tablespoons cooking oil over high heat; fry the potatoes for about 3 minutes until golden.
Add 1 cup of carrots and sauté for 1 minute.
Add 1 cup of green bell pepper; continue to sauté until fragrant, then transfer to another container.
In the same pan, sauté chicken sausages in 1 tablespoon cooking oil over medium heat for about 1 minute until cooked, then set aside.
Heat more oil and sauté the marinated chicken liver over high heat for about 3 minutes until browned; transfer to another container.
Add the marinated pork belly to the pan and pour in the marinade; cook until it starts to sizzle.
Add 2 tablespoons tomato paste and sauté for 1 minute.
Add 1 cup of chopped tomatoes and cook until softened.
Pour in the reserved marinade from the pork belly and sauté for 1 minute.
Add 2 cups of water, 2 bay leaves, and 1 tablespoon siling labuyo; stir and bring to a boil.
Once boiling, reduce heat to low and simmer for 45 minutes or until the pork is tender, adjusting time as necessary based on meat quality.
Season with 1 teaspoon chicken powder and 2 tablespoons liquid seasoning; add the cooked chicken sausages and 1/3 cup frozen green peas; stir and taste for seasoning.
Add the fried raisins and cook over high heat for about 3 more minutes until the oil separates from the sauce.
