1

Place short rib in a pot without browning it.

2

Cover the meat with water and bring to a boil.

3

Skim off any scum that forms on top of the water.

4

Prepare vegetables: quarter the onion, carrot, and celery, and keep dill in large pieces.

5

Once the water boils, add the quartered vegetables, white peppercorns, bay leaves, and salt to the pot.

6

Ensure everything is covered with water; add more if necessary.

7

Cover the pot and reduce heat to simmer for 1.5 to 2 hours until the meat is tender.

8

Check the meat after 1.5 hours; if tender, remove from heat and strain the broth.

9

Pick out pieces of meat and separate them from the bones, then chop the meat into bite-sized pieces.

10

Return the chopped meat to the pot with the broth.

11

Turn the heat back on and season the sauce with 1.5 teaspoons of sugar and the juice of half a lemon.

12

Add salt and the juice of the other half of the lemon, adjusting to taste.

13

Thicken the sauce with 3 tablespoons of all-purpose flour mixed with cold water to prevent lumps.

14

Add a splash of cream to the sauce and bring it to a boil until visibly thickened.

15

Finish the sauce with more dill before serving.

16

Boil potatoes separately and serve the sauce over the potatoes, or serve with mashed potatoes and a green salad.
