Mix flour, sugar, and salt in a large bowl.
Activate yeast in warm milk until bubbly, about 5-10 minutes.
Combine the yeast mixture with the flour mixture.
Add melted butter and eggs, mixing until a dough forms.
Knead the dough on a floured surface for 10 minutes until smooth.
Let the dough rise in a warm place until doubled, about 1-2 hours.
Punch down the dough and divide into equal portions.
Roll each portion into a rectangle, spread with margarine, and sprinkle with cheese.
Roll the rectangle tightly into a log shape and coil it into a spiral.
Place the coiled dough in greased baking pans and let rise again for 30-45 minutes.
Preheat the oven to 350°F (175°C).
Bake the ensaymada for 20-25 minutes until golden brown.
Cool slightly before brushing with melted butter and sprinkling with powdered sugar and coconut.
