My New Favorite Scrambled Eggs Dish! Menemen!

Heat a large pan over medium heat.

Add 2.5 tablespoons of butter to the pan and let it melt. Optionally, let it brown for added flavor.

Add 1 medium chopped onion and a mix of 1 large chopped red bell pepper and 2 chopped red fresno peppers to the pan.

Cook the peppers and onions for about 5 minutes until softened.

Add 3 minced cloves of garlic and 1 teaspoon of chili flakes to the pan, stirring for 30 seconds to 1 minute until fragrant.

Stir in 1 pound of chopped tomatoes and season with salt and black pepper to taste.

Cover the pan and let the mixture simmer for at least 10 minutes to blend the flavors.

Optionally, add 1/4 cup of melty cheese to the sauce and stir in.

In a bowl, scramble 5 large eggs and pour them into the pan over the sauce without mixing too much.

Cover the pan and let the eggs set on medium-low heat, occasionally tilting the pan to help the eggs cook evenly.
