Fine chop 2 green chilies, removing seeds and stems if desired.

Grate 5 tomatoes.

Heat a pan on medium flame and add 3 tablespoons of extra virgin olive oil.

Add the chopped green chilies to the pan and cook for 2 to 3 minutes.

After 2 minutes, add 1 tablespoon of unsalted butter to the pan and cook for 35 to 40 seconds until the butter is slightly brown.

Add the grated tomatoes to the pan and cook until they change color and form a sauce.

Add 3/4 teaspoon of salt, 2 teaspoons of paprika powder, and 1/2 teaspoon of red pepper flakes to the mixture and cook for 30 to 40 seconds on medium-low flame.

Add cheddar cheese to the mixture and cook for another 35 to 40 seconds until the cheese is incorporated.

Add 4 eggs to the pan, breaking them gently and mixing slightly without breaking them into pieces.

Cook the eggs thoroughly without overcooking them and then turn off the fire.
