1 tablespoon butter
1 cup sweet red bell peppers, diced
1 cup green Anaheim chilies, diced
1 cup crushed San Marzano tomatoes
6 whole eggs
1 cup diced onion
1 cup grated Monterey Jack cheese
1 teaspoon dried oregano
1 teaspoon red pepper flakes
1/2 teaspoon freshly ground black pepper
1/4 cup cilantro, chopped
for serving: crusty bread

Melt butter and olive oil over medium high heat.

Add diced sweet red bell peppers, green Anaheim chilies, and diced onion (if using) to the skillet.

Add a pinch of salt and sauté until softened and slightly browned.

Stir in a touch of dried oregano, red pepper flakes, and freshly ground black pepper.

Add crushed San Marzano tomatoes and stir to combine.

Reduce heat to low, cover, and let simmer for about 10 minutes until vegetables are soft.

Stir in half of the grated Monterey Jack cheese until melted.

Add whole eggs to the mixture and stir until eggs are mixed in to desired consistency.

Cover and cook on low for a couple of minutes until the mixture is just barely set.

Turn off the heat and sprinkle the rest of the cheese on top.

Drizzle with olive oil and sprinkle with Turkish or Syrian chili flakes.
