Wash and grate 2 kg of large carrots and transfer them to a heavy-bottomed pan.

Add 0.5 liters of fresh milk to the grated carrots, just enough to cook the carrots without making them mushy.

Cover and cook on low to medium flame, checking occasionally, until the carrots are cooked through.

Prepare a mixture of 250 grams of khoya, 1 cup of sugar, and 0.5 cup of ghee.

Once the carrots are cooked, add the sugar and cook on high flame until the sugar dissolves and the mixture thickens.

Add the prepared ghee and khoya mixture to the cooked carrots and sugar, stirring well.

Incorporate chopped almonds and walnuts into the mixture.

Cook for an additional 6-7 minutes until the mixture is well combined and the ghee is absorbed without excess oil.

Remove from heat and let it cool slightly before serving.
