Peel and wash 1 1/2 kg red carrots.

Grate the carrots using a medium-sized grater.

In a heavy-bottomed pan, heat 1 tbsp ghee.

Add 2 tbsp gond and cook on medium flame, stirring continuously until it puffs and turns golden.

Remove the gond and mash it coarsely while it's still warm.

In the same pan, add another tbsp of ghee and 15 chopped almonds and 15 chopped cashews, frying them until golden and then set aside.

Add the grated carrots to the pan and cook on low flame for at least 15 minutes until they soften.

Take 1 cup of fresh cream (or ready-made cream) and whip it until smooth.

Add the whipped cream to the softened carrots and mix well on medium flame.

Increase the flame to high and cook while stirring until the water from the carrots evaporates.

Add 4 cups of milk (1 liter) and cover the pan slightly open to prevent overflow, cooking on medium flame for 10 minutes.

After 10 minutes, uncover and increase the flame to high to evaporate the milk completely, stirring continuously.

Once the milk is evaporated, add the previously prepared gond and 1/2 tsp green cardamom powder, mixing well and cooking for 2-3 minutes.

Add 1 cup of sugar (or powdered sugar) and mix on high flame until the sugar dissolves, ensuring it remains slightly moist before turning off the flame.

Transfer the mixture to a large plate and spread it out to cool.

Take 400 grams of khoya, remove any lumps, and add it to a pan with 3 tbsp of milk and 1 tbsp of sugar, cooking on medium flame until it bubbles, then turn off the flame.

Pour the khoya over the cooled carrot halwa, spreading it evenly to cover.

Optionally, garnish with silver varq, fried almonds, cashews, and chopped pistachios.

Cut the halwa into square pieces and serve warm.
