Chicken Momos
Cultural Context
Originating from Tibet, momos are a beloved street food in the Himalayan region, often filled with meat or vegetables. Traditionally served with a spicy dipping sauce, they symbolize hospitality and community. Today, momos have gained popularity across India and beyond, with various regional adaptations and fillings, making them a versatile dish enjoyed by many.

Add 1/2 teaspoon salt to all-purpose flour in a bowl.
Add 4 teaspoons cooking oil to the flour and mix well.
Gradually add 1/2 cup water to the flour mixture and knead until soft.
Knead the dough for 10-12 minutes and let it rest for 25 minutes covered.
Prepare the chicken filling using 300 grams of boneless ground chicken.
Add 1 cup finely chopped cabbage, 1 cup finely chopped onion, and 1/2 teaspoon garlic paste to the chicken.
Mix in 4-5 finely chopped green chilies, 1/2 teaspoon chaat masala, 2 teaspoons red chili powder, 1 teaspoon salt, 1 teaspoon dry coriander powder, 1/2 teaspoon garam masala, a pinch of turmeric, and a pinch of black pepper.
Add juice of 1/2 lemon and 2 teaspoons cooking oil to the mixture.
Add 2 tablespoons tomato ketchup and fresh coriander leaves, and mix everything well by hand.
Divide the dough into small balls and roll each into thin circles.
Place a spoonful of filling in the center of each circle and fold to seal.
Prepare a steamer by adding a little cooking oil to prevent sticking.
Steam the momos for 20 minutes on medium-low flame, ensuring water does not touch the momos.
Prepare a dipping sauce by sautéing 1 teaspoon garlic paste in 3 tablespoons cooking oil.
Add 4 tomato puree, 2 tablespoons white vinegar, 1 tablespoon soy sauce, 1 teaspoon salt, and 1/2 teaspoon red chili powder to the sauce.
Cook the sauce on medium flame for 5-6 minutes until thickened and add chopped green chilies and fresh coriander before serving.
