Use a fork to gently whisk the eggs until the yolks are broken and mixed together.

Add a pinch of pepper and a pinch of chives (optional) to the eggs.

Heat a saucepan on low and add a knob of butter, waiting until it's melted.

Once the butter is melted, give the eggs a final whisk and pour them into the saucepan.
