Light olive oil has a milder taste, making it suitable for mayonnaise.
Break an egg into a mixing bowl.
Add 1 cup of vegetable oil to the bowl.
Add 1/4 teaspoon of salt to taste.
Add 1 tablespoon of lime juice (or lemon juice).
Using a hand mixer or blender, gradually mix everything until it thickens, which will take roughly 3 to 5 minutes.
Store the mayonnaise in glass jars and keep it in the refrigerator for up to a month.
For the second method, break an egg into a blender.
Add 1 tablespoon of lime or lemon juice to the blender.
Add 1/4 teaspoon of salt to taste.
Pour a little of the 1 cup of oil into the blender and cover it.
Blend, adding the oil gradually to avoid sticking the blades together.
Once thickened, remove from the blender and store in bowls or glass jars.
