Cook the onions, stirring occasionally, for about 30 minutes until they are caramelized.
Preheat the oven to 400°F.
Take a sprig of fresh rosemary, remove the leaves, and finely chop to yield about 1 teaspoon.
Leave 10 ounces of goat cheese out of the fridge for about 30 minutes to soften.
In a mixing bowl, combine the softened goat cheese, 1/3 cup of grated parmesan cheese, 1 teaspoon of crushed red pepper flakes, 1 tablespoon of minced garlic, and 2 tablespoons of olive oil.
Mix the ingredients until well combined, using a smush and pull method if necessary.
Grease an oven-safe ceramic dish with a bit of olive oil to prevent sticking.
Transfer the cheese mixture into the greased dish, pressing and smoothing it out evenly.
Place the dish in the preheated oven and bake for about 15 minutes.
Check on the caramelized onions, and if they are sticking to the bottom of the pan, deglaze with 1 teaspoon of balsamic vinegar.
Slice the baguette on a bias and drizzle with olive oil, then sprinkle with salt.
Toast the baguette slices in the oven alongside the cheese dip.
After 15 minutes, remove the cheese dip from the oven and ensure it is not overheated to avoid a grainy texture.
Top the toasted baguette slices with the goat cheese dip, caramelized onions, and diced fire roasted bell peppers.
