Instructions
- 1Preheat the oven to 400°F (200°C).
- 2In a saucepan, combine fresh cranberries, sugar, and water. Cook over medium heat until the cranberries burst and the mixture thickens, about 10 minutes. Stir in vanilla extract and let cool.
- 3Roll out the puff pastry on a lightly floured surface and cut it into squares, about 3x3 inches.
- 4Place a spoonful of the cranberry mixture in the center of each pastry square.
- 5Fold the corners of the pastry over the filling to create a pocket and pinch to seal.
- 6Brush the tops of the pastry with the beaten egg to give them a golden color when baked.
- 7Place the puffs on a baking sheet lined with parchment paper.
- 8Bake in the preheated oven for 15-20 minutes or until golden brown and puffed up.
- 9Remove from the oven and let cool slightly before dusting with powdered sugar.
- 10Serve warm or at room temperature.

- ●2 tbsp honey
- ●1 tbsp balsamic vinegar
- ●1 tbsp fresh lime juice
- ●8 skewers (soaked in water if wooden)
Instructions
- 1In a bowl, combine olive oil, lime juice, chili powder, garlic powder, salt, and black pepper to create a marinade.
- 2Add the prawns to the marinade and toss to coat. Let them marinate for at least 30 minutes in the refrigerator.
- 3While the prawns are marinating, prepare the raspberry dipping sauce. In a small saucepan, combine raspberries, honey, balsamic vinegar, and lime juice.
- 4Cook the mixture over medium heat, stirring gently until the raspberries break down and the sauce thickens, about 5-7 minutes. Remove from heat and let cool.
- 5Preheat the grill or grill pan over medium-high heat.
- 6Thread the marinated prawns onto the skewers, butterfly them by slicing them down the back without cutting all the way through.
- 7Place the skewers on the grill and cook for 2-3 minutes on each side, or until the prawns are opaque and cooked through.
- 8Remove the skewers from the grill and let them rest for a minute before serving.
- 9Serve the butterfly chili lime prawn spedini with the raspberry dipping sauce on the side.
