1

Preheat the oven to 375°F (190°C).

2

In a mixing bowl, combine all purpose flour, cold cubed butter, salt, and ice cold water to form the pie crust. Roll out and fit it into a pie dish, trimming the edges.

3

Blind bake the crust for 10-15 minutes until lightly golden.

4

Heat olive oil in a skillet over medium heat and sauté chopped onion until translucent, about 5 minutes.

5

Add minced garlic and cook for an additional minute until fragrant.

6

Stir in the spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

7

In a mixing bowl, whisk together eggs, heavy cream, salt, black pepper, and nutmeg until well combined.

8

Spread the spinach mixture evenly over the baked crust.

9

Crumble goat cheese and fire roasted bell pepper over the spinach mixture.

10

Pour the egg mixture over the filling, ensuring it's evenly distributed.

11

Sprinkle parmesan on top, if desired.

12

Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly browned on top.

13

Let the quiche cool for 10 minutes before slicing and serving.
