Khari Puri

2 cups all-purpose flour
1/2 tsp salt
1/4 cup ghee or oil
1/2 cup water (as needed)
1/2 tsp ajwain seeds (carom seeds)
Oil for deep frying

In a mixing bowl, combine the all-purpose flour and salt.

Add the ghee or oil to the flour mixture and mix until it resembles coarse crumbs.

Gradually add water, a little at a time, and knead to form a smooth dough.

Cover the dough with a damp cloth and let it rest for 30 minutes.

After resting, divide the dough into small balls (about the size of a golf ball).

Roll each ball into a thin circle, about 6 inches in diameter.

Sprinkle ajwain seeds on top of each rolled circle and fold it into a semi-circle, then fold again to form a triangle, sealing the edges well.

Heat oil in a deep frying pan over medium heat.

Once the oil is hot, carefully slide in the puris, a few at a time, and fry until they puff up and turn golden brown.

Remove the puris with a slotted spoon and drain on paper towels.
