Soak the almonds in water for 1 hour to 1.5 hours.
Boil 2 cups of water in a boiler.
Add the almonds to the boiling water, turn off the flame, and cover for 5 minutes.
Transfer almonds to a bowl of cold water and peel them.
Put the peeled almonds back in hot water and cover for 1 to 1.5 hours to make them fluffy.
Grate the almonds after soaking.
Add saffron threads to the milk to infuse color.
Grind the almonds with saffron milk and additional milk as needed to make a fine paste.
Heat a non-stick pan and melt 2 tbsp ghee in it.
Add the almond paste to the pan and stir.
Add 1 cup powdered sugar and cook on medium flame until it reaches a thick consistency.
Once thick, remove the mixture from the pan to cool quickly.
Knead the cooled mixture and shape it into a round ball, then flatten it into a rectangle.
Roll out the mixture to approximately 1 cm thick using a rolling pin.
Cut the rolled almond katli into pieces using a pizza cutter or knife.
