1

Measure 1/2 cup of blanched almonds and soak them in very hot water for 30 minutes to 1 hour to easily remove the skin.

2

Peel the skin off the soaked almonds.

3

Grate the peeled almonds using a cheese grater while they are still soft until you have 1 cup of grated almonds.

4

In a heavy-based kadhai, add 1/2 cup of sugar and 1/4 cup of water.

5

Heat the mixture over steady temperature and do not allow it to boil until the sugar is completely dissolved.

6

Once the sugar is dissolved, check for a long string consistency in the syrup.

7

Add the grated almonds to the syrup and stir for some time until it starts sticking.

8

Gradually add 1/4 cup of ghee little by little while stirring.

9

Continue cooking until the mixture starts bubbling and leaves the sides of the vessel, becoming porous and changing to a whitish color.

10

Pour the mixture into a greased tray and allow it to set for 1 to 2 minutes before cutting into pieces.
