Boil water in a saucepan.

Add oats to boiling water and cook until tender, about 5-7 minutes.

While oats are cooking, heat olive oil in a skillet over medium heat.

Crack eggs into the skillet and cook to desired doneness, season with salt, black pepper, and chilli flakes.

Dice green apple, capsicum, and tomato, and add to cooked oats, stirring to combine.

Once eggs are cooked, place them on top of the oats mixture.

Serve warm, garnished with additional black pepper if desired.
