1 green chili
1 teaspoon coriander powder
2 teaspoons turmeric powder
1/2 teaspoon chili powder
1/4 to 1/2 cup water
5-6 small onions
1/4 big onion
1 grated carrot
salt to taste

Prepare the sprouts the previous day by soaking 1 cup each of white chana and black chana overnight and sprouting for 12 hours.

Grind the oats into a fine powder and set aside.

In a large mixer, add the sprouted chana, 1 inch ginger, 1 teaspoon cumin seeds, a handful of chopped coriander leaves, 1 cup curd (or 3/4 cup thicker Greek yogurt), 1 green chili (optional), 1 teaspoon coriander powder, 2 teaspoons turmeric powder, and 1/2 teaspoon chili powder.

Grind everything to a fine paste, adjusting water to achieve a pourable consistency (about 1/4 to 1/2 cup water).

Add 5-6 small onions and 1/4 big onion to the mixture and grind again until smooth.

Mix in the oats powder and salt to taste, then add water to adjust the batter consistency, letting it sit for about 15 minutes.

Grate one carrot and mix it into the batter.

Heat a tawa and pour the batter to make dosas, drizzling a little oil on top.

Cook for 2 minutes until the dosa browns slightly, then gently turn it over and cook the other side until slightly browned.

Repeat with the remaining batter, yielding about 10 dosas.
