Cut the 3-pound chuck roast into big chunks.

Prepare a pepper paste using 3 hot Portuguese peppers, olive oil, and kosher salt; rub it onto the beef chunks.

Place the seasoned beef into a tumbler and vacuum seal it for about 3 minutes.

Let the beef marinate for 30 minutes.

Preheat the pit boss smoker to 225°F and smoke the beef for about 1 hour.

In a 5-quart Dutch oven, add a large sliced onion, a small bunch of fresh parsley, and 2 bay leaves.
