1/2 cup mint leaves
1 green chili

black salt to taste

1 cup gram flour (besan)
2 tablespoons rice flour
1 teaspoon carom seeds (ajwain)
salt to taste
3/4 cup water
a pinch of baking soda

Prepare a paste using 1/2 cup coriander leaves, 1/2 cup mint leaves, 1 green chili, 1/2 teaspoon cumin seeds, black salt to taste, and 1 teaspoon nylon sev. Grind until a thick paste is formed.

In a bowl, combine 1 cup gram flour (besan), 2 tablespoons rice flour, 1 teaspoon crushed carom seeds (ajwain), and salt to taste. Mix well.

Gradually add water (about 3/4 cup) to the dry ingredients to make a smooth batter, ensuring there are no lumps.

Add a pinch of baking soda to the batter and mix well until combined.

Slice the vegetables: cucumber, tomato, ridge gourd (tori), and paneer into round circles.

Spread the prepared paste over the sliced vegetables.

Dip each vegetable slice into the batter and carefully place them into the hot oil.

Fry the pakodas on medium flame until they turn golden brown.

Once fried, remove the pakodas from the oil and serve hot.

Sprinkle some chaat masala on top and serve with ketchup or chutney.
