Dahi Kadhi

3/4 cup dahi / curd
1 cup water
1 tbsp mung flour
2 tbsp water
1 tbsp oil
1/2 tsp mustard seed
1/2 tsp cumin seed
a pinch asafoetida
1-2 green chili (chopped)
8-10 curry leaves
1 tsp ginger (grated)
salt (as per taste)
1/2 tsp sugar
1 tbsp coriander leaves (chopped)

In a bowl, add 3/4 cup curd and whisk well until smooth.

Add 1 cup water to the smooth curd and mix well to form a thick buttermilk. Set aside.

In a separate small bowl, combine 1 tbsp mung flour with 2 tbsp water and mix well to create a smooth batter. Set aside.

Heat 1 tbsp oil in a pot.

Add 1/2 tsp mustard seeds and let them splutter.

Add 1/2 tsp cumin seeds and a pinch of asafoetida, then sauté for a few seconds.

Add 1-2 chopped green chilies, 8-10 curry leaves, and 1 tsp grated ginger. Sauté for a minute until fragrant.

Pour the prepared buttermilk into the pot.

Add salt as per taste and 1/2 tsp sugar. Mix well.

Stir in the mung flour batter. Mix thoroughly to avoid lumps.

Add 1/2 cup water and mix again.

Bring the kadhi to a good boil, stirring occasionally.

Once boiled well, add 1 tbsp chopped coriander leaves and mix.

Serve the Maharashtrian Dahi Kadhi warm.
