Dahi Kadhi

1 cup curd (yogurt)
2 cups water
1 tablespoon oil or ghee (clarified butter)
½ teaspoon mustard seeds
½ teaspoon cumin seeds
1 or 2 green chilies, slit
6-7 curry leaves
¼ teaspoon turmeric powder
7 to 8 garlic cloves
salt as required
½ teaspoon sugar or as required
1 to 2 tablespoons chopped coriander leaves (cilantro leaves) for garnishing

In a bowl, take 1 cup curd (yogurt). Use the curd which is made from full fat milk.

Pour 2 cups water.

Mix very well with a wired whisk.

Whisk the mixture very well so that no lumps are there.

The mixture should be smooth else the kadhi will not appear smooth.

Measure all the ingredients and keep ready.

Heat 1 tablespoon oil or ghee in a kadhai or pan.

Add ½ teaspoon mustard seeds and let them crackle.

Then add ½ teaspoon cumin seeds and let them crackle.

Add 7 to 8 chopped garlic cloves, 1 or 2 slit green chilies, and 6 to 7 curry leaves. Saute for a few seconds.

Then add ¼ teaspoon turmeric powder and stir and mix well.

Add the curd and water mixture. Stir and mix very well.

Season with salt and add ¼ teaspoon sugar or as required. You can also add jaggery instead of sugar.

Mix very well and let the kadhi or sauce come to a gentle simmer.

Continue to simmer till it becomes slightly thick, stirring at intervals.

Check the taste and then add more salt or sugar if required.

Serve Maharashtrian kadhi hot with pakoda, steamed rice or moong dal khichdi along with papad and pickle.
