3

Cut the bread slices diagonally into triangle pieces.

4

Arrange a layer of bread in the bottom of the oven dish, buttered side up.

5

Sprinkle in around 30 grams of raisins and half a teaspoon of ground cinnamon.

6

Add another layer of bread and repeat, sprinkling in another 30 grams of raisins and half a teaspoon of ground cinnamon.

7

Finish with a layer of bread on top and set aside.

8

In a saucepan on low heat, add 350 milliliters of full fat milk and 50 milliliters of double cream and heat until slightly bubbling.

9

In a bowl, crack two eggs and add three and a half tablespoons of sugar, whisk until well combined.

10

Transfer the egg mixture to a mixing bowl.

11

Once the milk and cream are slightly bubbling, remove from heat and pour into the mixing bowl, stirring everything together well.

Using a sieve, strain the mixture into a bowl to remove any solid bits.

Pour the custard over the bread and sprinkle another half tablespoon of sugar on top, followed by a pinch of ground nutmeg.

14

Leave the mixture for 30 minutes.

15

Preheat the oven to 200 degrees Celsius.
