Iraqi Tashreeb is a traditional dish that embodies the heart of Iraqi home cooking, often enjoyed during family gatherings. It reflects the country's rich culinary heritage, where stews are common due to their ability to feed many and utilize local ingredients. Tashreeb's name derives from the Arabic word for 'to soak', referring to the way the flavorful broth is absorbed by the flatbread. Today, variations exist across the Middle East, with each region adding its own twist, making it a beloved comfort food.

Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onions and cook until translucent, about 5 minutes.
Stir in minced garlic and cook for 1 minute until fragrant.
Add diced lamb and brown on all sides, about 8-10 minutes.
Incorporate chopped carrots and potatoes, stirring to combine.
Add diced tomatoes and cook for 3-4 minutes until softened.
Pour in water or broth to cover the ingredients, then bring to a boil.
Season with salt, black pepper, and spices, then reduce heat to low.
Cover and simmer for 1.5 to 2 hours until lamb is tender.
Add chickpeas in the last 15 minutes of cooking.
Adjust seasoning to taste before serving.
Serve hot over pieces of flatbread, garnished with cilantro and a squeeze of lemon juice.
