Indonesian Beef Rendang
Cultural Context
Originating from the Minangkabau ethnic group of West Sumatra, Rendang is traditionally served at ceremonial occasions and is often considered a dish of honor. The slow-cooking process allows the rich flavors of spices and coconut milk to meld, resulting in a tender, aromatic dish. Today, Rendang has gained international fame, often appearing in various adaptations across the globe, from restaurants to home kitchens.

Add the spice paste and cook until fragrant, about 3-4 minutes.
Add the beef to the pot and brown on all sides, about 5-7 minutes.
Pour in the coconut milk and add lemongrass, galangal, and bay leaves.
Bring to a simmer, then reduce heat to low and cover.
Cook for 2-3 hours, stirring occasionally, until the beef is tender and the sauce thickens.
Add lime leaves and sugar, stirring to combine.
Continue to cook uncovered for another 30 minutes to intensify flavors.
Season with salt to taste before serving.
