4 cups hot water (for baking soda bath)
1/4 cup baking soda (for baking soda bath)

Combine 3 cups of all-purpose flour, 1 packet of instant yeast, 2 tablespoons of brown sugar, and 1 teaspoon of salt in a mixing bowl.

Add 1 tablespoon of melted unsalted butter and 1 and 1/2 cups of warm water to the dry ingredients.

Mix the ingredients using a stand mixer on low speed for about 8 minutes until the dough is stretchy.

Form the dough into a ball and place it in a bowl sprayed with canola oil, covering the top with oil as well.

Let the dough rise for around 1 hour until it doubles in size.

For the cheese sauce, melt 1 tablespoon of unsalted butter in a small pot over medium heat.

Pour in 1 cup of whole milk while continuously whisking until it thickens slightly, then turn off the heat.

After 1 hour, check on the risen dough and spray a clean surface with non-stick spray.

Turn out the dough onto the sprayed surface and cut it into strips for pretzels.

Roll each strip to about 36 inches long without popping the air bubbles.

Twist the dough into a pretzel shape by creating a U, crisscrossing the ends, and then folding them down.

Prepare a baking soda bath by mixing 4 cups of hot water with 1/4 cup of baking soda until dissolved.

Dip each pretzel into the baking soda bath briefly before placing them on a parchment-lined tray.
