Add 2 egg yolks and melted butter to the batter and let it rest.
Whisk the egg whites until firm peaks form and fold them into the batter for a light texture.
Fill a measuring jug halfway with batter and pour it into the waffle maker.
Close the lid and wait for the timer to go off.
Open the lid to check the waffles, cut them in half for serving.
Top the waffles with fresh mango, fresh strawberries, white chocolate mousse, and sprinkle with pistachio praline and icing sugar.
