Cook rice according to package instructions and set aside.
Heat cooking oil in a large skillet over medium heat until shimmering.
Add diced onion and cook until translucent, about 3-4 minutes.
Stir in minced garlic and ginger, cooking until fragrant, about 1 minute.
Add diced carrot and green bell pepper, sautéing until tender, about 5 minutes.
Incorporate pineapple chunks and cook until heated through, about 2 minutes.
Push the mixture to one side of the skillet and crack an egg into the empty space, scrambling it until cooked.
Mix the scrambled egg into the vegetable and pineapple mixture.
Add cooked rice to the skillet, stirring to combine all ingredients.
Pour soy sauce over the rice and mix well, cooking for an additional 2-3 minutes.
Stir in peas and chopped green onions, cooking until heated through, about 2 minutes.
Season with salt and black pepper to taste.
If using shrimp, add it now and cook until pink and opaque, about 3-4 minutes.
Remove from heat and garnish with additional green onions if desired.
