2 lbs goat meat, cut into chunks
2 tbsp vegetable oil
1 large onion, chopped
4 cloves garlic, minced
1 tbsp fresh ginger, grated
2-3 Scotch bonnet peppers, chopped (adjust for spice level)
1/4 cup soy sauce
1/4 cup apple cider vinegar
2 tbsp brown sugar
1 tbsp allspice
1 tsp thyme
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/2 tsp black pepper
1/4 cup green onions, chopped

In a large bowl, combine the goat meat with soy sauce, apple cider vinegar, brown sugar, allspice, thyme, cinnamon, nutmeg, salt, and black pepper. Mix well to coat the meat evenly.

Add the chopped Scotch bonnet peppers, onion, garlic, and ginger to the bowl. Mix again to ensure all ingredients are well combined.

Cover the bowl with plastic wrap and marinate in the refrigerator for at least 4 hours, preferably overnight for best flavor.

Preheat your grill or oven to medium-high heat.

In a large skillet, heat the vegetable oil over medium heat. Add the marinated goat meat and sear on all sides until browned, about 5-7 minutes.

Transfer the seared goat meat to the grill or oven. Cook for about 45 minutes to 1 hour, turning occasionally, until the meat is tender and cooked through.

If using a grill, you can add wood chips for a smoky flavor during the last 15 minutes of cooking.

Once cooked, remove the goat from the heat and let it rest for 10 minutes before serving.
