12 leaves palak / spinach
1 tsp tamarind date chutney
1 tsp green chutney
2 tbs curd / yogurt, whisk
pinch chaat masala
pinch black salt
pinch chilli powder
pinch cumin powder / jeera powder
squeeze lemon
1 tsp pomegranate (optional)
¼ cup sev, fine

Prepare the batter by mixing 1 cup besan, ¼ tsp turmeric, ½ tsp chilli powder, ¼ tsp ajwain, ¼ tsp salt, ¼ tsp chaat masala, and ½ cup water until smooth.

Dip the 12 leaves of palak into the batter, ensuring they are well coated.

Air fry or deep fry the coated palak leaves until crispy.

For the chaat, combine 1 tsp tamarind date chutney, 1 tsp green chutney, and 2 tbs whisked curd in a bowl.

Add a pinch of chaat masala, black salt, chilli powder, and cumin powder to the mixture.

Squeeze lemon juice into the chaat mixture and mix well.

Top the fried palak with the chaat mixture and garnish with 1 tsp pomegranate (if using) and ¼ cup fine sev.
