12 to 15 medium sized palak leaves (spinach leaves)
a pinch of turmeric powder
a pinch of asafoetida (hing)
a pinch of red chili powder
a generous pinch of saunf powder (fennel powder)
¼ teaspoon ajwain (carom seeds or bishops weed)
salt as required
1 tablespoon rice flour (optional)
water as required
oil for frying the pakoras
1 small onion, finely chopped
a small bowl of curd (yogurt) or any vegan yogurt
a small bowl of green chutney
a small bowl of sweet chutney
sev as required - fried gram flour vermicelli
¼ cup pomegranate arils (optional)
chaat masala as required
roasted cumin powder as required
red chili powder as required
black salt as required

Wash and dry the palak leaves.

In a mixing bowl, combine the palak leaves with turmeric powder, asafoetida, red chili powder, saunf powder, ajwain, and salt.

If using, add rice flour to the mixture and mix well.

Heat oil in a pan for frying.

Dip the seasoned palak leaves in the batter and fry until crispy to make pakoras.

In a serving plate, place the fried pakoras.

Top with chopped onion, curd (or vegan yogurt), green chutney, sweet chutney, sev, pomegranate arils, chaat masala, roasted cumin powder, red chili powder, and black salt.
