500g spinach leaves
1/2 cup gram flour
1/8 cup rice flour
1 cup corn flour or arrowroot powder
salt (to taste)
1 tsp carom seeds
water (as required)

tamarind chutney
chat masala
red chili powder
cumin powder
sev
pomegranate seeds (optional)

Wash and clean spinach leaves.

Dip the leaves in cold water for 15 minutes.

Make a semi-thick batter by mixing gram flour, rice flour, and corn flour (or arrowroot powder).

Add salt and carom seeds to the batter.

Add water as required to achieve the desired consistency.

Pat dry the spinach leaves.

Dip the leaves in the batter and fry until they become crisp.

To serve, place the fried spinach crisps on a plate.
