1

Start by making the sauce: combine 1/3 cup of water with light sodium soy sauce, dark soy sauce, sesame oil, fish sauce, sriracha, brown sugar, and cornstarch. Mix until fully incorporated and set aside.

2

Chop both the white and green parts of the scallions and set aside.

3

Heat sesame oil in a pan over medium heat.

4

Add organic grass-fed beef to the pan. (Alternative options include ground turkey, ground chicken, or pork.)

5

Create a space in the pan to sauté the white part of the scallions for about 2-3 minutes.

6

Mix the scallions with the beef, then add crushed garlic and ginger once the meat is mostly cooked.

7

Add onion powder and garlic powder, and sauté for about 2 minutes.

8

Turn the heat to medium-low and add the sauce to the pan, sautéing for about 1 minute until fully incorporated.

9

Add shaved carrots (pre-shaved for convenience) and sauté for another 2-3 minutes until the sauce is incorporated with the carrots, ensuring not to overcook them for crunch.

10

Top the mixture with fresh cilantro and fresh basil. If you dislike cilantro, parsley can be used as a substitute. Add green scallions on top, cover, and remove from heat.

11

Prepare the vermicelli by starting with boiling water. Place the vermicelli in a large deep bowl and cover with enough water to fully submerge the noodles.

12

Stir the vermicelli and let it sit for about 8-10 minutes until fully cooked.

13

To plate, start with the vermicelli, then top with a generous serving of the stir-fried beef mixture. Add extra sauce if desired, followed by more green scallions and crispy garlic.
