2 cups palak (spinach) – washed & chopped
1 medium onion – finely chopped
1 medium tomato – chopped
2 cloves garlic – chopped
1 small green chilli – chopped (optional)
½ tsp turmeric powder
½–1 tsp red chilli powder (to taste)
½ tsp cumin seeds
1–2 tbsp oil or ghee
Salt to taste
Water as needed
½ tsp garam masala
½ tsp coriander powder
A pinch of hing (asafoetida)

Wash dal well and pressure cook with 1½–2 cups water, turmeric, and a little salt for 2–3 whistles until soft. Mash lightly and set aside.

Blanch spinach in boiling water for 2 minutes, then transfer to cold water. Blend into a smooth puree.

Heat oil/ghee in a pan. Add cumin seeds and let them crackle. Add garlic, green chilli, and hing (if using) and sauté till fragrant.

Add onions and cook until golden. Add tomatoes, red chilli powder, and coriander powder; cook until soft and oil separates.

Add palak puree and cook for 3–4 minutes. Add cooked dal and mix well. Adjust water for desired consistency and simmer for 5–7 minutes. Finish with garam masala (optional).
