Break the vermicelli into smaller pieces for even cooking.
Heat 3 tablespoons of butter and 1 teaspoon of ghee in a pot.
Add the broken vermicelli to the pot and toast until brown, stirring frequently.
Warm 4 cups of milk in a separate pot.
Add the toasted vermicelli to the warm milk.
Add in the spices: cinnamon sticks, cardamom, star anise, and clove.
Cook until the vermicelli is soft and has absorbed some milk.
Add 1 can of evaporated milk and mix well.
Add raisins and cook until they are plump.
Add 1 can of sweetened condensed milk for sweetness and richness.
Stir in 1 teaspoon of mix essence and half a cup of cherry preserved cherries with juice.
Cook until the mixture thickens to desired consistency.
