1 large potato, peeled, boiled, mashed and kept warm
2 1/2 tsp. yeast
1 tsp. sugar
1 3/4 cup flour
1 tbsp olive oil (or vegetable oil)
3/4 tsp. salt
1/2 cup milk
2 cloves garlic

Place ingredients in the order given, except for the garlic, in a mixing bowl. Using the paddle attachment, combine the ingredients until well moistened.

Switch to the dough hook and knead for 5 to 7 minutes or until smooth and elastic. Transfer to a greased bowl, cover and let rise until doubled.

Separate the dough into four portions, shape into rounds and place on a lightly floured board. Cover and let rest for 20 minutes.

In a large skillet, heat 1 inch of oil to 350°F. Flatten and stretch out each portion to about 8 inches in diameter and fry for about two minutes per side until golden brown. Drain on paper towels.

Serve warm with rubbed garlic clove.
