Steam 500 grams of potatoes until soft.
Mash the steamed potatoes in a bowl.
Add 1 kilogram of all-purpose flour and 4 teaspoons of salt to the mashed potatoes; mix well.
In a separate bowl, combine 300 ml of skim milk with 2 teaspoons of instant yeast and mix.
Add the yeast mixture to the potato mixture along with 150 ml of peanut oil and 150 ml of extra virgin olive oil; knead until a dough forms.
Let the dough rest for 30 to 60 minutes until it doubles in size.
Roll the dough into a rectangle and brush it thinly with softened unsalted butter.
Fold the dough like a letter (envelope style) and let it rest for 15 minutes.
Roll the dough out again to the same size and brush with butter; fold again.
Roll the dough flat and cut it into rounds, optionally adding texture if desired.
Brush the tops of the rounds with a beaten egg.
Bake until golden brown.
