4 tbsp olive oil, divided
1.5 lbs beef chuck roast
2–3 tbsp all-purpose flour
2 yellow onions, finely diced
3 garlic cloves, minced
1 tbsp sweet paprika
1 tsp hot paprika
½ cup dry red wine (optional)
3 Roma tomatoes, chopped
1 tbsp tomato paste
½ tsp caraway seeds
1 tsp dried marjoram
2 bay leaves
6.5 cups low-sodium beef broth
4 carrots, peeled and chopped
1 red bell pepper, chopped
3 small Yukon Gold potatoes, cubed
Juice of 1 small lemon
¼ cup chopped fresh parsley
Crusty bread for serving

Cut beef into bite-size pieces. Season with salt, pepper, and toss with flour.

Sear beef in 2 tbsp oil over medium-high heat until browned. Remove from pot.

Add 2 tbsp oil, sauté onion until soft, stir in garlic.

Add red wine, simmer until reduced (about 5 mins).

Stir in tomatoes, tomato paste, paprika, caraway, marjoram, bay leaves.

Add broth, return beef. Bring to boil, then cover and simmer 1.5 hrs.

Add bell pepper, carrots, potatoes. Simmer 20–30 mins.

Discard bay leaves. Finish with lemon juice and parsley.
