1 lb 90% lean ground beef
2 carrots
1 onion
1 potato
1 rib of celery
2 cloves minced garlic
1 cup frozen corn
10 oz gluten-free elbow macaroni
1 12 oz can crushed tomatoes
1 cup gluten-free beef broth
1 tbsp smoked paprika
1/2 cup wine
2 tbsp lowfat sour cream or Greek yogurt

In a large skillet or Dutch oven over medium-high heat, sauté 1 lb of 90% lean ground beef with salt and pepper to taste for about 10 minutes or until fully cooked and slightly browned.

If the bottom of the pan is not fairly dry, drain off any excess grease.

Add 2 diced carrots, 1 diced onion, 1 diced potato, and 1 diced rib of celery to the skillet and sauté for another 10 minutes.

Stir in 1 12 oz can of crushed tomatoes, 1 cup of gluten-free beef broth, 1/2 cup of wine, and 1 tbsp of smoked paprika. Stir everything together.

Lower the heat, cover, and simmer for 20 minutes.

Put a pot of water on to boil the 10 oz of gluten-free elbow macaroni.

After 20 minutes of simmering, stir in 1 cup of frozen corn, cover the pot, and cook for an additional 10 minutes.

Cook the macaroni in the boiling water until done, then add it to the skillet with 2 tbsp of lowfat sour cream or Greek yogurt. Stir everything together.
