6 large onion chopped
6 Tbsp of oil
2 tsp of Ethiopian cardamom
1 Tbsp of Ethiopian spiced butter
4-5 Tbsp of berbere
2 Tbsp of crushed garlic
Salt to test
1 tsp of tomato paste
2-3 medium to large ripe crushed tomatoes
About 600ml of hot boiling water

Cook the onions with its own juice.

Once the juice dries out, add the oil and berbere, reduce the heat to the lowest possible and let the onions continue to cook for about another 10 mins.

Add the crushed garlic, mix it, add tomato paste, mix and give it a few mins to blend in.

Add the crushed tomatoes, mix and let it cook for about 5 mins.

Add the washed lentils, mix well, reduce the heat to lowest possible, cover and let it cook for about 5-7 mins, stirring in between.

Add the hot boiling water, stir, cover and let it simmer for about 5 mins.

Add salt to taste and once cooked, remove from the heat and enjoy with injera.
